Featured in February 2010 Gluten Free Vitamins Newsletter

Hope this gives you some ideas for healthy breakfasts. My patients often find breakfast the most difficult meal of the day, especially when they first go gluten free. I provided options that also exclude some of the common allergen like egg, dairy and soy. Enjoy!

  1. Gluten Freeda’s single serve gluten free granola, milk of your choice and fresh blueberries.
  2. Slice of gluten free toast with red pepper hummus, I like this one and used to eat it way before I was gluten free. Any hummus will do, Gluten free of course, I like Sabra or tribe store bought. (Remember hummus is made with sesame paste, if you have an allergy to sesame avoid this.)
  3. Gluten free oatmeal with 2 tbsp salba (you can get Salba, a brand name of chia in single serving “sticks” which makes life easy) and maple syrup to taste.
  4. Two egg omelet with ¼ cup fresh spinach and 2 thinly sliced mushrooms with ¼ cup of grated cheddar inside.
  5. Fresh raspberries, single serving of plain Greek yogurt (if you have a dairy sensitivity consider coconut yogurt by So Delicious, it really is so delicious, my eight year old loves it) and honey to taste. You can also add ground flax seeds, chia seeds and/or rice bran to add fiber. It is also good with pistachios too.
