Dr. Doherty's Power Packed Oatmeal Breakfast
This recipe is a delicious, easy, super nutritious blend of oats, flax, buckwheat, rice bran, nuts and fruit. Oats are high in vitamin B1, magnesium and zinc. Studies have shown that adding oats to a gluten-free diet help achieve the recommended daily intakes of fiber. Flax contains lignans, more fiber, and omega-3 fatty acids. Rice bran has 120 different antioxidants, has almost all the vitamins except D and C, contains CoQ10, fiber and Omega 3 and 6 fatty acids. Buckwheat is also high in antioxidants, B vitamins, magnesium, phosphorus and potassium and prebiotic fiber. Try it, and start your day off right.
8 cups of gluten-free oats
¼ cup of rice bran
¼ cup ground flax seeds
¾ cup Pocono cream of buckwheat cereal
Mix the above ingredients in a container or large freezer bag. Store in the fridge to keep the ground flax seeds fresh.
To Prepare: use 1 cup of the mix above with ¼ cup of dried fruit (Trader Joe’s has some great dried mango and berry mixes), ¼ cup of pistachios, walnuts or pecans. Put in a small saucepan and add 2 cups of water. Soak overnight in the fridge. In the morning just heat on medium high heat on the stove or until thickened. Sweeten with gluten-free brown rice syrup, like Lundberg farms. Serves 2-3 per cup of mix.
