Delicious Potato Salad
Potatoes are a high-fiber food that offer significant protection against cardiovascular disease and cancer. They are high in vitamin C, a good source of vitamin B6, copper, manganese, dietary fiber, and potassium. In fact, potatoes have more potassium than bananas, and contain phytonutrients, including carotenoids and flavonoids. This is my mother’s recipe and people always rave about it. She says the key is putting the dressing and potatoes together while the potatoes are still warm. Keep the peel on because that is where most of the nutrients are.

3/4 cup mayonnaise
3 tablespoons cider vinegar
1 tbsp. Dijon mustard
1 1/2 tsp sugar
3/4 tsp salt
1/2 tsp black pepper
3 lbs cooked small (2 inch) boiling potatoes, slightly cooled and quartered
2 hard-boiled large eggs, chopped
3/4 cup finely chopped sweet onion
3/4 cup finely chopped celery
Paprika to taste
Whisk together mayonnaise, vinegar, mustard, sugar, salt and pepper in a large bowl.
Stir in warm potatoes, eggs, onion and celery. Sprinkle with paprika. Chill and serve.
