Dr. D's Feel Good, Super Brownies

Egg-free, dairy-free and gluten-free- The surprise ingredient of black beans in this recipe provides a total of 15 grams of both protein and fiber. It is a good source of tryptophan (one of the building of the feel good neurotransmitter serotonin), folate, magnesium, molybdenum and thiamin. The color is really a dark purple and it comes from anthocyanin which is a great antioxidant phytonutrient. They also contain quercetin, a flavanoid which decreases allergic reactions. Black beans are rich in a special prebiotic fiber that supports the bacteria making butyrate which is especially beneficial for the colon. So go ahead have your brownies and eat them too! This is a fast, semi-homemade kind of recipe. Very kid friendly.They do have sugar so don’t overdo it!
Recipe:
I small individual cup of applesauce
1 15 0z can of black beans, drained
I box Betty Crocker Gluten Free Brownie mix
½ of a Via individual package of decaf Starbuck instant coffee
Heat oven to 350F
In a food processor, blend the beans and the applesauce until smooth, place contents in stand mixer and add the box of GF brownie mix and the instant coffee. Blend for 2 minutes on medium. Put in a 9X9 square pan, bake for 15-20 minutes.
