Eat your Veggies!
Dr. Doherty’s mother-in-law, Marie’s recipe, it is amazing how these flavors come together. She varies which vegetables she uses and it always tastes amazing. Dr. Doherty’s favorite veggies in the recipe are broccoli and cauliflower. The secret lies in the seasonings, olive oil, ginger and maple syrup. Try it you will be amazed how delicious it is!
In a 9 x13 casserole dish arrange an assortment of broccoli, cauliflower, onions, zucchini, mushrooms, parsley or any combination of vegetables to your liking. Add 3/4 cup pecans and season with salt and pepper.
Drizzle approximately 1/4 cup olive oil over the assortment, cover and bake in a 350 degree oven until the vegetables are tender, about 40 minutes. Then add 1 tablespoon of fresh ginger, either grated or sliced finely, and 1/4 cup of maple syrup. Stir well, cover and continue baking 10 to 15 minutes more until vegetables are tender and juices are reduced. |
