GF Penne with Caramelized Onions
This is a hearty and comforting dish perfect for a winter meal. I hope you try it, you won’t regret it. The combination of the sweetness of the onions, the pop of the peas and the crunch of the nuts is crave worthy.
- 1 bag of brown rice penne
- 2 large white onions
- 2 Tbsp butter
- 2 Tbsp Olive oil
- 10 oz bag of frozen peas (preferably organic)
- 3 slices of prosciutto- optional
- 1 Cup of large walnut pieces
- Salt to taste (around 1 tsp)
Cook bag of pasta according to directions. Melt the butter and olive oil together in a large pot. Peel and cut onions in half, then slice in to half rounds. Cook them over low heat stirring frequently for ten minutes or until they are soft, brown and caramelized. Add bag of peas, walnuts, salt and stir until warm. In the microwave lay sliced prosciutto on a plate and cook on high for a minute, or until crisp (can also be done in the toaster oven). Let it cool. Add cooked, drained pasta to pot with the other ingredients and crumble prosciutto over the dish, toss and serve. |
