Honey Mustard Salmon

 

Many of the health benefits from salmon are related to the high concentration and bioavailability of omega-3 fats (EPA and DHA).  These fats are a benefit in many areas including: cardiovascular health, improved mood, joint protection, eye benefits, decreased cancer risk, and overall benefit in reducing inflammation.  Four ounces of salmon often contains around 2 grams of omega-3-fats.  The NIH recommends about 4 grams of omega-3-fats/ day.  Additionally, mustard has some anti-inflammatory and cancer prevention benefits.  Honey is a great natural sweetener.  Good quality honey has anti-bacterial, anti-fungal properties, and can improve blood lipid ratios.  This recipe is a tasty way to improve your health!

2 Tbsps melted butter
2 Tbsps grain mustard
2 Tbsps honey
4 wild Salmon fillets, approx 6 oz each
spray olive oil

Preheat oven to 375. Heat a pan coated with spray olive oil on the burner, a grill pain works best. Salt and pepper the raw salmon to taste and put in the hot pan, sear both sides of the fish. Mix the honey, melted butter and mustard together in a small dish. Spread over seared salmon, covering well. Place pan with the fish in the hot oven and cook for approximately 10 minutes. Serve with vegetable and starch of your choice.  Quick and delicious!
