Rachel Calow’s Winning Lemon Chicken

  • 1/2 cup lemon juice
  • 1/4 cup brown sugar
  • 1/4- 1/2 cup per baking dish GF chicken broth
  • 2lb chicken tenders
  • 2-3 lemons, sliced thin
  • 1/2 cup + GF flour to coat
  • Large glass baking dish

Preheat oven to 350

Soak chicken tenders in lemon juice for 2 hours. Using a ziplock bag, add GF flour and 3-4 pieces of chicken at a time, shaking to coat. Place coated pieces on plate. Once all coated, saute on medium high heat with olive oil until golden brown. Transfer pieces to baking dish and sprinkle each piece with thin coating of brown sugar. Add sliced lemons to top of pieces and pour 1/4 cup of chicken broth at bottom of dish. Bake for 20 minutes or until brown sugar has melted. Excellent served hot or cold.

To make gravy use drippings from the baking dish, add more chicken broth and a small amount of flour or arrowroot to thicken. Serve with mashed potatoes and broccoli. Enjoy!
