Turkey Pesto "Pizza"
I came up with this recipe when I was craving pizza but wanted something fast, with more protein and fewer calories. This can be made in a toaster oven and is very filling.
1 Gluten free tortilla, I use brown rice
2 slices of deli turkey, (GF, of course)
1 c. sliced mushrooms
cooking spray
1 Tbsp pesto
¼ c. sliced olives
¼ c. Fresh buffalo mozzerella if you can get it, but any shredded cheese works, too.
Fry the mushrooms until tender in cooking spray. Place tortilla on baking sheet, spread pesto evenly over whole surface. Layer turkey over whole surface. Spread mushrooms and sliced olives over that and top with cheese. Cook at 450 for 10-13 minutes. Slice like a pizza or fold over into a calzone shape. Let it cool slightly before eating
